Method
 

Step-by-Step Instructions
  1. Boil the Noodles: Bring a pot of water to a boil over high heat. Add the udon noodles and cook according to package instructions, about 2–3 minutes. Drain, rinse with cold water, and drizzle with oil.
  2. Sauté the Aromatics: In a large pan, heat neutral oil over medium heat. Add minced garlic, sauté for 1 minute. Stir in white mushrooms, cooking for an additional 2–3 minutes. Remove and set aside.
  3. Cook the Vegetables: In the same pan, add more oil and increase heat. Toss in yellow onion and carrots, stirring for 2–3 minutes. Season with salt and pepper, then remove and set aside.
  4. Prepare the Shrimp: Return pan to heat, add oil. Cook shrimp for 3–4 minutes until pink and opaque. Drizzle in soy sauce and cook further until done.
  5. Combine Noodles and Shrimp: Add cooked udon to the pan, tossing with shrimp over high heat for 1–2 minutes until flavors blend.
  6. Add Sauce and Vegetables: Pour sauce mixture over noodles and shrimp, tossing for 2–3 minutes. Add back the sautéed vegetables and mix until heated through.
  7. Finish and Serve: Plate the Yaki Udon with Shrimp, garnish with spring onions and serve hot.
