- Boil the Noodles: Bring a pot of water to a boil over high heat. Add the udon noodles and cook according to package instructions, about 2–3 minutes. Drain, rinse with cold water, and drizzle with oil.
- Sauté the Aromatics: In a large pan, heat neutral oil over medium heat. Add minced garlic, sauté for 1 minute. Stir in white mushrooms, cooking for an additional 2–3 minutes. Remove and set aside.
- Cook the Vegetables: In the same pan, add more oil and increase heat. Toss in yellow onion and carrots, stirring for 2–3 minutes. Season with salt and pepper, then remove and set aside.
- Prepare the Shrimp: Return pan to heat, add oil. Cook shrimp for 3–4 minutes until pink and opaque. Drizzle in soy sauce and cook further until done.
- Combine Noodles and Shrimp: Add cooked udon to the pan, tossing with shrimp over high heat for 1–2 minutes until flavors blend.
- Add Sauce and Vegetables: Pour sauce mixture over noodles and shrimp, tossing for 2–3 minutes. Add back the sautéed vegetables and mix until heated through.
- Finish and Serve: Plate the Yaki Udon with Shrimp, garnish with spring onions and serve hot.
