Preparation Steps
  1. Prepare the Egg Mixture by cracking 3 eggs into a bowl and whisking with a pinch of salt for 1 minute.
  2. Combine Liquids by measuring equal volumes of hot water and stock, and whisk into the egg mixture with sesame oil.
  3. Strain the Mixture through a fine mesh strainer into a heatproof dish to ensure a smooth texture.
  4. Set Up the Steamer by boiling water, place the dish with the egg mixture into the steamer and cover.
  5. Finish Steaming by cooking on high for 3 minutes, then turn off the heat and let sit covered for 14 minutes.
  6. Garnish and Serve by removing the dish from the steamer, garnishing with scallions and serving warm.
