- Begin by heating a large skillet over medium-high heat and adding a drizzle of oil. Sear the beef chunks for about 3-4 minutes on each side until browned. Set aside.
- In the same skillet, melt butter over low heat and add minced garlic. Simmer for about 2-3 minutes until the garlic is golden and fragrant.
- In your slow cooker, add the seared beef and halved Yukon Gold potatoes. Pour the melted garlic butter over them and add enough beef broth to immerse halfway.
- Set your slow cooker on LOW for 7-8 hours or HIGH for 4-5 hours until the beef is tender and shreddable.
- Once cooked, shred the beef with two forks and sprinkle with fresh parsley before serving.
