- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper.
- In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy (3-5 minutes).
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the butter mixture, stirring gently.
- Fold in graham cracker crumbs and chocolate chips until evenly distributed.
- Spread half of the cookie batter into the prepared pan and sprinkle mini marshmallows on top. Then, spread the remaining batter over.
- Top with extra chocolate chips and marshmallows as desired.
- Bake for 25-30 minutes until golden brown; a toothpick should come out with moist crumbs.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
