- Preheat your oven's broiler to high. Arrange slices of sourdough bread in a single layer on a baking sheet.
- Broil the bread for 1–2 minutes until lightly golden-brown, keeping a close watch.
- Remove the baking sheet, flip the bread, layer sharp cheddar cheese on one slice, and return to broiler for 1–2 minutes until melted.
- After the cheese melts, place pickled jalapeños on top of the melted cheddar.
- On the other slice of toasted bread, smear with Dijon mustard and drizzle with honey. Add apple slices, red onion, and arugula.
- Sprinkle kettle potato chips over the arugula for added crunch.
