Step‑by‑Step Instructions
  1. In a large saucepan, heat olive oil over medium-high heat, add chopped onion and sauté for 3-4 minutes until translucent.
  2. Add minced garlic, grated ginger, chopped celery, and diced carrot. Sauté for another 5-7 minutes until tender and aromatic.
  3. Stir in tomato paste, paprika, red chili flakes, and cubed sweet potato. Cook for 3-4 minutes.
  4. Pour in vegetable stock and balsamic vinegar, bring to a gentle boil, then reduce heat and simmer for 45 minutes.
  5. Add long-grain rice and continue to simmer for 15-20 minutes until rice is cooked.
  6. Season with salt and black pepper to taste.
  7. Stir in fresh parsley or coriander before serving. Ladle into bowls and enjoy.
