  • 1 tbsp Brown Sugar Palm sugar is a good alternative.
  • 1 tbsp Lime Juice Adjust for desired tanginess.
  • 2 pieces Kaffir Lime Leaves Optional; lime zest can substitute.
For the Veggies & Protein
  • 1 cup Mushrooms Any variety works.
  • 1 medium Tomato Cherry tomatoes can be used.
  • 1 lb Shrimp Tofu is a great vegetarian alternative.
For Garnish
  • 1/4 cup Fresh Cilantro Essential for flavor.
  • 2 pieces Thai Chili Slices For heat and color.

Cooking Steps
  1. Boil water in a pot. Cook rice noodles according to package instructions, about 6-8 minutes. Drain and rinse under cold water. Set aside.
  2. In a large pot, heat cooking oil over medium heat. Add Tom Yum paste and sauté for about 1 minute until fragrant.
  3. Add chicken or vegetable broth and bring to a gentle boil.
  4. Add sliced mushrooms, simmer for 2-3 minutes. Then add shrimp and diced tomato, cooking until shrimp are pink.
  5. Stir in coconut milk, fish sauce, lime juice, and brown sugar. Adjust seasoning as needed.
  6. Divide cooked noodles into serving bowls and ladle hot broth over them.
  7. Garnish with fresh cilantro and Thai chili slices. Serve immediately.
