Cooking Steps
- Boil water in a pot. Cook rice noodles according to package instructions, about 6-8 minutes. Drain and rinse under cold water. Set aside.
- In a large pot, heat cooking oil over medium heat. Add Tom Yum paste and sauté for about 1 minute until fragrant.
- Add chicken or vegetable broth and bring to a gentle boil.
- Add sliced mushrooms, simmer for 2-3 minutes. Then add shrimp and diced tomato, cooking until shrimp are pink.
- Stir in coconut milk, fish sauce, lime juice, and brown sugar. Adjust seasoning as needed.
- Divide cooked noodles into serving bowls and ladle hot broth over them.
- Garnish with fresh cilantro and Thai chili slices. Serve immediately.
