  1. In a large mixing bowl, combine shredded chicken, cream cheese, diced sausage (if using), chopped green onions, cheddar cheese, hot sauce, and Cajun seasoning. Blend the ingredients thoroughly until creamy and evenly seasoned. Set aside.
  2. Lay an egg roll wrapper on a clean surface with one corner facing you. Scoop about 2 tablespoons of the filling and place it near the bottom corner. Fold the bottom over the filling, tuck the sides in tightly, and roll up snugly toward the top corner. Brush the edge with beaten egg to seal.
  3. In a deep skillet or fryer, pour in about 2 inches of vegetable oil. Heat the oil over medium-high heat until it reaches 350°F (175°C). To test, drop a small piece of the wrapper in—it should bubble immediately.
