Ingredients
  

Casserole Base
  • 4 cups Cooked Chicken shredded, leftover rotisserie chicken works great
  • 1 can Artichoke Hearts drained and chopped
  • 10 oz Frozen Chopped Spinach well-drained
  • 1/2 cup Mayonnaise can substitute with Greek yogurt
  • 1/2 cup Sour Cream can substitute with plain yogurt
Cheesy Goodness
  • 2 cups Mozzarella Cheese shredded
  • 1/2 cup Parmesan Cheese grated
Flavoring
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Black Pepper
  • 1 tsp Salt
Crunchy Topping
  • 1 tbsp Olive Oil
  • 1 cup Breadcrumbs
  • 3 tbsp Butter melted

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine cooked chicken, chopped artichoke hearts, and frozen chopped spinach.
  3. Stir in mayonnaise, sour cream, mozzarella, Parmesan, garlic powder, onion powder, black pepper, and salt.
  4. Lightly grease a 9x13-inch baking dish with olive oil.
  5. Spoon the chicken mixture into the greased baking dish and spread evenly.
  6. Mix breadcrumbs with melted butter until evenly coated.
  7. Sprinkle breadcrumb mixture over the chicken base and top with remaining mozzarella and Parmesan.
  8. Cover with aluminum foil and bake for 20 minutes.
  9. Remove foil and bake for an additional 10-15 minutes until golden and bubbly.
  10. Let cool for 5-10 minutes before serving.
