  • 1/2 cup Brown Sugar or more granulated sugar
  • 1 tsp Baking Soda
  • 2 tsp Pumpkin Spice can use individual spices
  • 1 cup Pumpkin Puree canned or homemade
  • 1/2 cup Vegetable Oil or melted butter
  • 2 large Eggs or flax eggs for vegan
  • 1 tsp Vanilla Extract
For the Cream Cheese Filling
  • 8 oz Cream Cheese or plant-based cream cheese
  • 1/4 cup Granulated Sugar adjust to taste
  • 2 Tbsp Flour optional
  • 2 Tbsp Milk or plant-based alternative

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners or grease the cups.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking soda, and pumpkin spice.
  3. In a separate bowl, combine the pumpkin puree, vegetable oil, eggs, and vanilla extract, whisk until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined; the batter should be thick and aromatic.
  5. In a small bowl, mix together the cream cheese, granulated sugar, flour, and milk until smooth and creamy.
  6. Scoop half of the muffin batter into each prepared cup, add a dollop of cream cheese filling, then spoon more batter on top.
  7. Bake for 18-20 minutes, check for doneness with a toothpick which should come out clean.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
