For the Pasta
  • 12 oz Rigatoni Pasta substitute with penne or cavatappi for a twist
For the Sauce
  • 2 tbsp Olive Oil can substitute with canola or avocado oil
  • 1 lb Steak (sirloin or ribeye) choose well-marbled cuts for tenderness
  • 1 medium Onion or substitute with shallots for a milder flavor
  • 1 medium Bell Pepper any color works or swap with zucchini
  • 3 cloves Garlic fresh minced or can use garlic powder
  • 1 cup Heavy Cream can lighten it up with half-and-half
  • 4 oz Blue Cheese can substitute with feta or goat cheese
  • 1 tbsp Dried Oregano or use fresh oregano
  • to taste Salt adjust according to preference
  • to taste Black Pepper adjust according to preference
  • 1 cup Mozzarella Cheese shredded, can substitute with cheddar or fontina
  • to taste Fresh Parsley for garnish, can substitute with basil

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a rolling boil. Add the rigatoni and cook for 10-12 minutes until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add steak pieces and sear for 3-4 minutes until golden-brown. Remove steak and let rest.
  3. In the same skillet, add more olive oil if necessary, diced onion, and bell pepper. Sauté for about 5 minutes until onion is translucent.
  4. Reduce heat to low, add minced garlic, and cook for 1 minute. Pour in heavy cream, scraping up browned bits from the skillet.
  5. Stir in crumbled blue cheese, dried oregano, salt, and black pepper. Cook over low heat, stirring until cheese melts and sauce thickens.
  6. Return sliced steak to skillet and fold in cooked rigatoni with the sauce, ensuring even coating.
  7. Transfer mixture to a greased baking dish and top with shredded mozzarella cheese.
  8. Preheat oven to 375°F (190°C) and bake for 15-20 minutes until cheese is bubbling and golden.
  9. Remove from oven, let sit for a few minutes, then garnish with chopped parsley and serve hot.
