Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C) and prepare a baking dish with nonstick spray.
  2. In a mixing bowl, cream granulated sugar, brown sugar, and butter until light and fluffy. Add eggs, vanilla, buttermilk, maple syrup, and mashed bananas, mixing until smooth.
  3. In another bowl, whisk gluten-free flour, baking powder, baking soda, kosher salt, and cinnamon. Ensure no lumps.
  4. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  5. Pour the batter into the baking dish and bake for 45-55 minutes until a toothpick comes out clean.
  6. While the cake bakes, prepare the toffee sauce by melting butter and brown sugar in a saucepan, then adding heavy cream and vanilla.
  7. After the cake cools, poke holes and pour the warm toffee sauce over it, allowing it to soak for an hour.
  8. Slice and serve warm, drizzling additional toffee sauce as desired.
