For the Pico de Gallo
  • 1 medium Pineapple firm and ripe
  • 1 medium Red Onion finely chopped
  • 1 medium Jalapeño deseeded for less heat
  • 1 medium Red Bell Pepper finely chopped
  • 1/4 cup Cilantro chopped
  • 1 juiced Lime
  • to taste Salt
  • to taste Pepper
  • optional to taste Tajin for extra flavor

Method
 

Preparation Steps
  1. Dice the fresh, ripe pineapple into small chunks.
  2. Finely chop the red onion, jalapeño, and red bell pepper.
  3. In a large bowl, combine the diced pineapple, red onion, jalapeño, and red bell pepper.
  4. Chop the cilantro and add it to the bowl with the other ingredients.
  5. Squeeze lime juice over the mixture and mix thoroughly.
  6. Season with salt, pepper, and Tajin if desired.
  7. Taste and adjust seasoning before chilling.
  8. Refrigerate for about 30 minutes before serving.
