Ingredients
  

For the Chicken
  • 1 pound Chicken boiled, baked, or grilled
For the Sauce
  • 1/2 cup Sweet Chili Sauce mild sauce for gentler kick
For the Wraps
  • 2 pieces Tortillas gluten-free if needed
For the Fresh Crunch
  • 2 cups Lettuce/Greens any leafy greens
  • 1 cup Cucumber sliced thinly
  • 1 cup Carrots shredded
  • 1/4 cup Red Onion optional
For Extra Creaminess
  • 1 medium Avocado optional, sliced before serving
  • 1/4 cup Mayonnaise or Greek Yogurt hummus as substitute
  • 1 cup Shredded Cheese omit for dairy-free
For the Fresh Finish
  • 1/4 cup Fresh Cilantro or basil
  • 1 tablespoon Lime Juice or lemon as substitute
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Cooking and Assembling
  1. Preheat your oven to 375°F (190°C) or prepare a grill. Season chicken with salt and pepper, then cook until internal temperature reaches 165°F (75°C), roughly 25-30 minutes. Once cooked, let cool, then shred or dice.
  2. In a large mixing bowl, combine shredded chicken with sweet chili sauce. Stir until well-coated and let sit for a few minutes to absorb flavors.
  3. Wash and prep your veggies. Shred lettuce, slice cucumber, grate carrots, and thinly slice red onion if using. Keep avocado reserved for last.
  4. Take a tortilla and spread a layer of mayonnaise or Greek yogurt. Layer greens, chicken mixture, prepared veggies, shredded cheese, and cilantro. Squeeze lime juice over and season with salt and pepper.
  5. Fold the sides of the tortilla inward and roll tightly from the bottom to enclose the filling. Slice in half if preferred for easier handling.
