Step-by-Step Instructions
  1. Start by seasoning chicken with salt and black pepper. Place it in the bottom of the slow cooker.
  2. In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, garlic, and ginger. Whisk until smooth.
  3. Pour the sauce over the chicken. Add pineapple chunks and red bell pepper on top.
  4. Cover and cook on low for 5-6 hours or high for 3-4 hours until chicken is fork-tender.
  5. Remove chicken, mix cornstarch with cold water to create a slurry, and add to the sauce in cooker. Cook on high for 15 minutes.
  6. Return chicken to the slow cooker and coat with sauce. Cook for another 5 minutes.
  7. Serve hot over cooked rice, garnished with green onions and sesame seeds.
