- Start by seasoning chicken with salt and black pepper. Place it in the bottom of the slow cooker.
- In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, garlic, and ginger. Whisk until smooth.
- Pour the sauce over the chicken. Add pineapple chunks and red bell pepper on top.
- Cover and cook on low for 5-6 hours or high for 3-4 hours until chicken is fork-tender.
- Remove chicken, mix cornstarch with cold water to create a slurry, and add to the sauce in cooker. Cook on high for 15 minutes.
- Return chicken to the slow cooker and coat with sauce. Cook for another 5 minutes.
