Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Cook the quinoa according to package instructions, about 15 minutes.
  3. Sauté the diced onion and minced garlic in olive oil until soft and translucent, about 3-5 minutes.
  4. Add rinsed black beans, corn, diced tomatoes, cumin, and chili powder. Cook for another 3-4 minutes.
  5. Mix the cooked quinoa into the vegetable mixture and heat through, about 2 minutes.
  6. Prepare the bell peppers by cutting off the tops and removing seeds.
  7. Stuff the bell peppers with the quinoa and bean filling, packing loosely.
  8. Pour a splash of water into a baking dish, place the stuffed peppers upright and cover with foil.
  9. Bake for 25 minutes, then uncover, sprinkle with cheese, and return to the oven for 10-15 minutes.
  10. Let cool slightly before serving, optionally garnished with fresh herbs or avocado.
