Preparation Steps
  1. Preheat your oven to 375°F (191°C). Line a roasting pan with foil or parchment paper.
  2. In a mixing bowl, combine ketchup, apricot jam, red wine vinegar, Worcestershire sauce, minced garlic, salt, pepper, and finely chopped onion. Mix to create a glaze.
  3. Coat the chicken pieces with the glaze and arrange skin-side up in the lined roasting pan.
  4. Bake the chicken for 30 to 45 minutes, until golden brown and internal temperature reaches 160°F (71°C). Broil for an extra 4 minutes for crispiness.
  5. Remove from the oven, let rest, and garnish with freshly chopped parsley. Serve with extra glaze on the side.
