  • 2 pieces naan bread store-bought or homemade options work well.
  • 1 medium red onion soaking in cold water can mellow flavor.
  • 1/4 cup fresh mint feel free to vary types of herbs based on preference.
  • 1/4 cup fresh cilantro can be varied according to taste.

Method
 

Preparation Steps
  1. In a mixing bowl, combine plain yogurt, minced garlic, fresh ginger, lemon juice, hot paprika, cumin, garam masala, and cayenne pepper. Stir until smooth.
  2. Coat boneless skinless chicken thighs with half of the prepared marinade and let marinate in the fridge for at least 30 minutes.
  3. Mix the remaining marinade with a few tablespoons of tomato paste to create a sauce for the naan.
  4. Preheat grill or skillet to medium-high heat, cook marinated chicken for 6-7 minutes on each side until fully cooked.
  5. Spread sauce on naan, layer with grilled chicken slices, diced mango, sliced red onion, and top with mozzarella cheese.
  6. Grill the assembled pizzas for 5-7 minutes until cheese is melted and naan is brown.
  7. Garnish with freshly chopped mint and cilantro before serving.
