Step-by-Step Instructions

  2. Place chicken thighs in the slow cooker and pour the marinade evenly over the chicken.
  3. Layer pineapple slices on top of the marinated chicken.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Remove pineapple slices and shred the chicken with two forks.
  6. Stir in diced pineapple, sliced red pepper, and red onion and cook for an additional 30 minutes.
