For the Pumpkin Sage Sauce
  • 1 can Canned Pumpkin Puree Fresh pumpkin can be a great alternative if prepared.
  • 1/2 cup Heavy Cream Substitute with coconut milk for a lighter version.
  • to taste Salt and Pepper Essential for seasoning to taste.

Method
 

Instructions
  1. In a large mixing bowl, combine soaked breadcrumbs, ground turkey, minced onion, and garlic. Add fresh sage, Italian seasoning, eggs, and grated parmesan. Mix gently and let rest for 5 minutes.
  2. Gently form the meatball mixture into balls, about 1 to 1.5 inches in diameter. Place on a plate and set aside.
  3. Heat a large skillet over medium heat with olive oil. Add meatballs in a single layer and cook for 6-8 minutes until golden brown and cooked through.
  4. In the same skillet, reduce heat to low and add pumpkin puree and heavy cream. Stir until combined and heated through, about 3-5 minutes.
  5. Gently place the cooked meatballs into the sauce, letting them simmer for an additional 2-3 minutes.
  6. Serve the meatballs with your favorite sides and garnish with fresh sage or grated parmesan.
