  • 1 cup Baby Carrots Regular chopped carrots can stand in beautifully.
  • 2 tablespoons Oil Olive oil is a great alternative.
  • 8 ounces Mushrooms Chestnut or portobello mushrooms are perfect choices.
  • 3 cloves Garlic Minced; garlic powder can be used in a pinch.
For the Sauce
  • 1 cup Red Wine Non-alcoholic wine or grape juice can be used.
  • 2 tablespoons Tomato Puree/Paste Ensure it’s well blended in.
  • 1 teaspoon Fresh Thyme Dried thyme works too, but use sparingly.
  • 2 leaves Bay Leaves Remove before serving.
  • 2 cups Vegetable Stock Homemade or store-bought works well.
For Seasoning
  • to taste Black Pepper Adjust according to your taste preferences.

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a large casserole dish suitable for stovetop and oven use.
  2. In the preheated casserole, pour oil and add baby onions and carrots. Sauté for 5-7 minutes until translucent.
  3. Lower the heat and add chopped mushrooms and minced garlic. Cook for 8-10 minutes until mushrooms are tender.
  4. Pour in the red wine and deglaze the pan, simmering for 3-5 minutes.
  5. Stir in tomato puree, thyme, and bay leaves, then add vegetable stock and mix well.
  6. Cover and bake for about 40 minutes, letting the vegetables become tender.
  7. Remove bay leaves, adjust seasoning with black pepper, and serve warm.
