Step-by-Step Instructions
  1. In a large stockpot, heat 1 tablespoon of oil over medium-high heat until shimmering.
  2. Add roughly chopped mushrooms and sauté for 3–5 minutes until browned.
  3. Pour in remaining tablespoon of oil, then add minced garlic and grated ginger. Sauté for 1–2 minutes until fragrant.
  4. Pour in 4 cups of vegetable broth and 2 tablespoons of soy sauce, and bring to a boil over high heat.
  5. Once boiling, add frozen dumplings and chopped bok choy. Cook for 3–4 minutes.
  6. Stir in 1 teaspoon of toasted sesame oil and a dash of black pepper. Adjust seasoning as needed.
  7. Ladle soup into bowls, garnishing each with sliced scallions.
