  • 8 oz Mushrooms Any variety works well.
  • 1 medium Onion Can use shallots for a milder flavor.
  • 2 cups Vegetable Broth Substitute with water or homemade broth if desired.
For Creaminess
  • 1/2 cup Coconut Cream Optional; lighter milk can be used for less fat.
For Brightness
  • 2 tbsp Fresh Lemon Juice For serving.

Directions
  1. Heat a large skillet over medium-high heat and add sliced mushrooms in a single layer. Allow browning without overcrowding for 5-7 minutes, stirring occasionally.
  2. Once browned, stir in chopped onions and cook for 3-4 minutes until translucent and aromatic, stirring occasionally.
  3. Add the drained white beans and vegetable broth to the skillet. Stir and let simmer for about 10 minutes until mixture thickens slightly.
  4. Fold in coconut cream (if using) and cook for an additional 2 minutes on medium heat.
  5. Squeeze fresh lemon juice over the skillet just before serving and stir to incorporate.
