Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook until al dente, about 8-10 minutes.
  2. In a mixing bowl, combine ricotta, olive oil, Parmesan, garlic, lemon zest, and lemon juice. Mix until creamy.
  3. In the last minute of cooking, add spinach to the pot and stir for about 30 seconds.
  4. Drain pasta and spinach, then return to the pot. Add ricotta mixture and half of the reserved pasta water. Stir to coat.
  5. Serve the pasta, garnishing with extra Parmesan and lemon wedges if desired.
