Step-by-Step Instructions for Peruvian Green Sauce
  1. Start by rinsing the cilantro under cold water and patting it dry. Mince the cilantro leaves, slice the green onions, and smash the garlic cloves.
  2. In a blender, combine the cilantro, green onions, garlic, diced jalapeños, lime juice, Greek yogurt, mayonnaise, rice vinegar, and olive oil. Season with salt and pepper to taste.
  3. Blend for about 30 seconds until smooth, scraping down the sides as needed to ensure even consistency.
  4. Taste the sauce and adjust seasoning as necessary with more salt, jalapeño, or lime juice.
  5. Transfer the sauce to a bowl and chill in the fridge for about 10 minutes before serving.
