  • 0.5 cups standard flour or whole wheat or gluten-free flour
  • 1 cups shredded pizza cheese consider part-skim mozzarella for lower fat
  • 1 tsp dried Italian seasoning adjust to taste
  • 1 pinch salt
  • 1 pinch pepper
  • 2 large eggs adjust for vegan version

Method
 

Crust Preparation
  1. Preheat your oven to 450°F (232°C) and heat the pizza stone, if using, for 20 minutes.
  2. Wash and shred about 2 cups of zucchini; wring out moisture with a kitchen towel.
  3. Combine zucchini, flour, shredded cheese, seasoning, salt, pepper, and eggs in a bowl.
  4. Shape the mixture on parchment paper into a circular crust about ½ inch thick.
  5. Bake for 10-15 minutes until golden and firm.
  6. Add your favorite toppings and return to the oven for an additional 5-10 minutes.
  7. Allow to cool briefly, slice, and serve.
