- In a mixing bowl, combine mayonnaise, lemon juice, diced pickles, Dijon mustard, and sugar. Stir until smooth and creamy, then refrigerate.
- Heat a skillet over medium heat and toast potato buns cut-side down for 2-3 minutes until golden.
- Chop shrimps into small pieces and mix well in a bowl.
- Combine chopped shrimp, salt, egg, parsley, onion, potato starch, and breadcrumbs in a bowl. Form into two patties.
- Coat each patty in remaining breadcrumbs.
- Fry patties in hot oil for 3-4 minutes each side until golden brown.
- Assemble burgers by adding toppings to toasted buns.
