  • 2 pounds Yellow Potatoes cut into large chunks
  • 1 teaspoon Baking Soda essential for crispy texture
For the Seasoning
  • 1 tablespoon Kosher Salt adjust to taste
  • 1 teaspoon Freshly-Cracked Black Pepper to taste
For the Flavor
  • 1/4 cup Duck Fat substitutes: olive oil or ghee
  • 2 tablespoons Extra-Virgin Olive Oil substitute: grass-fed butter
  • 1 whole Whole Head Garlic trimmed tops for roasting
  • 2 sprigs Fresh Rosemary finely chopped
For the Finishing Touch
  • 1 teaspoon Flaky Sea Salt sprinkle before serving

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. Place the cut yellow potatoes into a large pot of salted water. Bring to a boil and simmer for 10-15 minutes until tender.
  3. Drain the potatoes and rinse under cold water to stop cooking.
  4. Return the potatoes to the pot and add baking soda, kosher salt, black pepper, and duck fat. Toss to coat evenly.
  5. Spread the seasoned potatoes on a baking sheet lined with parchment paper, adding the whole head of garlic and chopped rosemary.
  6. Roast the potatoes in the preheated oven for about 1 hour and 25 minutes, flipping halfway through.
  7. Sprinkle flaky sea salt over the potatoes immediately after removing from the oven.
