Preparation Steps
- Preheat your oven to 425°F (220°C).
- Place the cut yellow potatoes into a large pot of salted water. Bring to a boil and simmer for 10-15 minutes until tender.
- Drain the potatoes and rinse under cold water to stop cooking.
- Return the potatoes to the pot and add baking soda, kosher salt, black pepper, and duck fat. Toss to coat evenly.
- Spread the seasoned potatoes on a baking sheet lined with parchment paper, adding the whole head of garlic and chopped rosemary.
- Roast the potatoes in the preheated oven for about 1 hour and 25 minutes, flipping halfway through.
- Sprinkle flaky sea salt over the potatoes immediately after removing from the oven.
