Method
 

Cake Preparation
  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. Whisk together all dry ingredients in a large mixing bowl.
  3. Add wet ingredients and mix until smooth.
  4. Incorporate boiling water carefully into the batter.
  5. Divide batter between the prepared pans and bake for 30-35 minutes.
  6. Allow baked layers to cool in pans for 10 minutes, then transfer to wire rack.
Cherry Filling Preparation
  1. Combine cherries and sugar in a saucepan over medium heat until juices are released.
  2. Mix cornstarch with water and stir into cherry mixture, cooking until thickened.
Whipped Cream Preparation
  1. Chill mixing bowl and beaters, then whip heavy cream with sugar and vanilla until stiff peaks form.
Assembling the Cake
  1. Place one cake layer on a platter, add whipped cream and cherry filling, then repeat with the second layer.
  2. Frost the entire outside with whipped cream and garnish with chocolate shavings and fresh cherries.
  3. Chill the cake in the fridge for at least 2-3 hours before serving.
