Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the sliced fresh peaches with white sugar, brown sugar, ground cinnamon, nutmeg, lemon juice, and cornstarch. Gently toss and pour into a baking dish, baking for 10 minutes.
  3. Mix all-purpose flour, white sugar, brown sugar, baking powder, and salt in a separate bowl. Cut in the unsalted butter until the mixture resembles coarse meal.
  4. Pour in the boiling water, stirring gently until a dough forms.
  5. Dollop the crust topping over the warm peaches in the baking dish.
  6. Mix topping sugar and ground cinnamon in a small bowl, and sprinkle over the crust topping.
  7. Bake the assembled cobbler for an additional 30 minutes until golden brown.
  8. Let it cool for a few minutes before serving warm, preferably with vanilla ice cream or whipped cream.
