  • 2 tablespoons fresh ginger grated
  • 4 cloves garlic minced
  • 0.25 cup soy sauce or tamari for gluten-free
  • 0.25 cup dark soy sauce optional
  • 1 cup coconut milk
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons fresh lime juice freshly squeezed

  • 1.5 pounds chicken dark meat preferred, cut into 1-inch pieces

Method
 

Preparation Steps
  1. In a mixing bowl, whisk together ginger, garlic, soy sauce, dark soy sauce, coconut milk, brown sugar, and lime juice until sugar dissolves.
  2. Cut chicken into 1-inch pieces and place in marinade, ensuring full coating. Cover and refrigerate for 30 minutes to 4 hours.
  3. Thread marinated chicken onto soaked skewers, leaving space between each piece.
  4. Preheat grill to medium-high heat, around 375°F (190°C), and lightly oil the grates.
  5. Grill skewers for approximately 4-5 minutes on each side until chicken reaches 165°F (74°C).
  6. Remove from grill, allow resting for a few minutes, squeeze fresh lime juice over skewers before serving.
