  • 1 pound Lean Ground Turkey Opt for 85% lean for flavor
  • 2 cups Bell Peppers (mixed colors) Any variety works, red and yellow are sweetest
  • 1 Onion (Yellow) Can swap with white or red onion
  • 2 cloves Garlic Fresh is best, garlic powder works in a pinch
  • 1 cup Tomato Sauce Crushed or diced tomatoes can be used
  • 1 teaspoon Italian Seasoning Try substituting with taco seasoning
  • 1 teaspoon Paprika
  • 1 teaspoon Chili Powder Adjust amount based on spice preference
  • to taste Salt
  • to taste Black Pepper
  • to taste Crushed Red Pepper Flakes Optional
For Serving
  • 2 cups Cooked Rice Use cauliflower rice for low-carb option
  • 1 cup Shredded Cheese Mozzarella or cheddar, optional
  • to taste Fresh Parsley or Cilantro For garnish

Method
 

Step-by-Step Instructions
  1. Heat a large skillet over medium heat and add 2 tablespoons of olive oil.
  2. Add 1 pound of lean ground turkey and cook for 5-7 minutes, breaking it apart, until browned.
  3. Stir in 1 diced yellow onion and 2 minced garlic cloves, sauté for 2-3 minutes until the onion is translucent.
  4. Add 2 cups of sliced bell peppers and cook for an additional 5-6 minutes until softened.
  5. Sprinkle with 1 teaspoon of Italian seasoning, 1 teaspoon of paprika, and 1 teaspoon of chili powder, season with salt and black pepper.
  6. Pour in 1 cup of tomato sauce, mix well and let it simmer for 5-8 minutes.
  7. If using, stir in 2 cups of cooked rice and mix well for 1-2 minutes.
  8. Remove from heat and garnish with freshly chopped parsley or cilantro before serving.
