  • 200 g Light Brown Sugar can substitute with granulated sugar
  • 3 large Eggs beaten in one at a time
  • 200 g Self-Raising Flour or gluten-free self-raising flour
  • 1 tsp Baking Powder check for gluten-free
  • 2 tbsp Instant Coffee Granules dissolved in hot water
  • 100 g Walnuts optional, chopped
For the Icing
  • 200 g Icing Sugar sifted
  • 50 g Milk to adjust consistency

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (160°C fan) or 350°F. Grease and line a 9x9-inch traybake tin.
  2. In a large mixing bowl, beat together softened butter and light brown sugar until pale and fluffy.
  3. Gradually add the eggs, beating well after each addition.
  4. Sift the self-raising flour and baking powder into the mixture and fold in gently.
  5. Dissolve the instant coffee granules in hot water and stir into the batter along with walnuts if using.
  6. Pour the batter into the prepared tin and bake for 25-30 minutes until golden brown.
  7. Allow the traybake to cool completely in the tin.
  8. Beat the softened butter with icing sugar until light and fluffy, then mix in dissolved coffee.
  9. Spread the coffee icing over the cooled traybake and garnish with walnut halves if desired.
